Crispy Santa Fe Chicken

Here is what we had for dinner tonight [sorry I don't have a picture.] It is a great delicious recipe that is fast and easy! You must try it! My husband loves it and has been asking me to make it for the past week.

Ingredients:
-6 boneless skinless chicken breasts halves
- 2 eggs beaten
-2 cups tortilla chips crushed
-cooking spray
-salsa
-cheese

Directions:
Place each breast in a gallon plastic bag and pound the thicker side until its the same width as the smaller end. Repeat with all of the chicken. Place the beaten egg in a shallow dish and the crushed chips in another shallow dish. Dip the chicken in the egg wash and then in the chips, turning and coating both sides. Make more crushed chips if necessary.

Spray a baking sheet with Pam and then place the chicken on. Finish with another heavy spray of the Pam. Bake at 425 degrees for 20- 25 minutes [depending on thickness of chicken] . Top with a spoonful of salsa and then sprinkle on cheese. Bake for another 5 minutes. Serve with more salsa and Ranch dressing.

You could also do this with French's Onion Rings or Cheddar Crackers or Goldfish. [I always use the Costco tortilla chips that way it is gluten free, and it is always delicious!]
